"Pancit Bato: A Taste of Bicolano Heritage"

 When it comes to Filipino merienda, nothing beats a hearty plate of pancit—especially Pancit Bato, a unique noodle dish from the province of Bato, Camarines Sur in the Bicol Region. Named after the town where the special dried noodles are made, this pancit is a must-try for every food lover looking to explore authentic regional flavors.

 Unlike ordinary noodles, Pansit Bato has a firmer texture and absorbs flavor beautifully, making it a satisfying meal whether for lunch, dinner, or merienda.

Let’s explore how this flavorful Bicolano favorite is made!


 Ingredients:

250g Pancit Bato noodles (available in most Bicolano stores or local markets)

1/2 kilo chicken breast or thigh, sliced into small strips

2 tablespoons soy sauce

1 tablespoon oyster sauce (optional)

1 medium onion, sliced

3 cloves garlic, minced

1 medium red bell pepper, julienned

1 cup cabbage, chopped

2 cups water or chicken broth

Cooking oil

Salt and pepper to taste





 How to Cook Pancit Bato:


1. Sauté the aromatics: In a large pan or wok, heat oil. Sauté garlic and onion until fragrant.


2. Cook the chicken: Add sliced chicken and cook until lightly browned and tender.


3. Add soy and broth: Pour in soy sauce, oyster sauce (optional), and chicken broth or water. Let it simmer for about 5 minutes.


4. Add the noodles: Place the Pancit Bato noodles directly into the simmering broth. Allow the noodles to absorb the flavor while softening, stirring occasionally.


5. Toss in vegetables: Once the noodles are almost done, add the bell pepper and cabbage. Mix well and cook for another 3–5 minutes until the vegetables are tender-crisp.


6. Season to taste: Adjust salt and pepper based on your preference.


Serving Suggestion:

Serve hot with calamansi on the side for that extra zing! Best enjoyed with a slice of bread or as is, paired with cold drinks during merienda or family gatherings.
